If I chip a stock obd1 300zx ecu and use an Ostrich to emulate, Will I be able to see map tracing with nistune?

yes you can with the consult cable. consult will pick up the tracing and nistune will add 'TP' to the consult table in the Z32 so it appears in stream mode
