I was just wondering how much are the 'Target A/F ratios' from the fuel map in line with what is actually measured
by a WB-Probe?

it all depends on how well you have finetuned the K-value and latency value
if these values are off, the target values are completely off also.
the sections in the fuelmap where the o2-sensor(s) are enabled, the ECU tries to get a stoichiometric mixture (~14,7 AF or lambda 1.0) and will ignore the target values as set in the fuelmap completely.
